Egg and Chorizo Breakfast Taco or Burrito Recipe

Here’s my quarantine breakfast taco or burrito recipe. This recipe is a great way to break up your daily oatmeal intake. Few things to note: chorizo matters, and how you prepare the eggs makes a difference. We tried these with both a fried and scrambled egg. Scrambled eggs are the way to go, also try and get your hands on Berkshire Pork Chorizo. For those unaware a Berkshire pig tends to have better flavor and is much more tender. I unfortunately received a chorizo “type” sausage that was substituted in our Walmart Grocery order, upon seeing the quality, I masked up and ran to a local Spanish grocer for a better quality chorizo. The first Chorizo we received wasn’t actually made of pork but more the by-products of the pig, so… the glands. While, I wasn’t able to grab the quality of chorizo I wanted, I found one made with pork, so the show continued. I found several varieties of chorizo and I went with one made with jalapeño.

Here’s all the ingredients you’ll need. (serves 2 – 3 tacos each) You can also make this into two breakfast burritos.

  • 4 eggs
  • use either corn or flour tortillas (flour is preferred) you can make your own corn tortillas with my guide. I used chili flake, and 2 Tsp of lime juice in my tortillas.
  • 2 chorizo links 8 oz (we used a Mexican blend with jalapeño)
  • One green Bell Pepper (use either raw or cook)
  • 1 Avocado (topping)
  • Sriracha Mayo (topping)
  • Salsa Verde (topping)
  • Sour Cream or Mexican Crema (topping)
  • Shredded Cheese (optional)

Directions

  1. Since the eggs cook the quickest, we’ll start with the chorizo first. Grab a chorizo link and cut a small tip of the top off of it, this will make it easy to remove the casing. Lightly score the casing from top to bottom and peel the casing off like a banana.
  2. Next either use a cheese grater or your hands, we’re going to crumble the chorizo. through the chorizo in a pan cook on medium-high heat, don’t worry about oil the fat content in the pork is going to grease the pan, keep the chorizo in the pan and occasionally stirring. We’re going to render as much fat out as we can without drying the pork out.
  3. In a small pan you can choose to sauté the green bell pepper with oil or throw the peppers raw into your tacos/burritos.
  4. Lastly move onto the eggs, scramble the eggs and work to control the heat as to not over cook the eggs. As you stir the eggs remove the pan on and off of the heat. Gordan Ramsey has a great guide for this process. The man loves crème fraîche, you can use sour cream as a substitute, or stick to your style of eggs.
  5. Assemble your taco and enjoy.
